He told that to make biryani, ghee is poured into the hottest pan, cardamom, cinnamon, royal cumin, black cardamom, bay leaf, mace, cloves, black peppercorns, nutmeg etc. are fried well in gota garam masala and tadka is applied. After this, roasted garam masala is added to the biryani rice soaked in water and it is completely covered and cooked on low flame. Due to which the aroma of garam masala and rice water mix well. This gives excellent taste and aroma to biryani rice. This is called applying force.
