Ingredients required for Mutton Biryani

for rice

Basmati rice – 500 grams
star anise – 1-2
Bay leaves – 2
Black cardamom – 2
Black cumin – 2 tsp
Black pepper – 5-6
Green cardamom – 5-6
Cloves – 5-6
Cinnamon stick – 2
Fennel – 1 tsp
Nutmeg – 1/4
Mace – 1
Salt – 3 tsp (as per taste)

For marinating mutton

Mutton – 1 kg
Garam masala – 1 tbsp
Garlic paste – 1
Papaya paste – 3
Hung curd – 4 tbsp
Lemon (juice) – one
Green chili – 4-5
Red chili powder – 1 tbsp
Finely chopped onions – 4-5
Chopped tomatoes – 2-3
Warm milk – 1/4 cup
Ghee, saffron, oil, rose water, kewra – as required
Salt – 1 tsp (as per taste)

step 1: To make Mutton Biryani, first of all mix curd, ginger-garlic and papaya paste, red chilli powder, salt, lemon juice and hot spices in the mutton. After this, keep this mixture for about three hours and leave it. On the other hand, finely chop two onions. After this, take a pan or wok, in which oil will be heated. When the oil is hot, add onion and fry it. Keep in mind that the oil should float well on the onion. For this, if needed, some more oil can be added. Now fry this onion while stirring with the help of a ladle. After roasting the onion, take it out and keep it on a tissue paper. Please tell that this fried onion is called barista.

After this, take a heavy bottomed pan and heat ghee in it. Now add the remaining chopped onions and green chillies to it. Tell that, keep stirring the mixture continuously until it turns light brown in color. Now add ginger-garlic paste to it and add marinated mutton. Which will be left to cook on high flame for about 10 minutes. After this add coriander powder, cumin powder and red chili powder and mix it. Then add three cups of water to it and boil it once. Now reduce the flame and cook the mutton. When the mutton is cooked, add tomatoes, salt, garam masala powder and coriander leaves to it. Now again cook it on low flame for about 15 minutes. But keep in mind that keep stirring the mixture in between. After some time, greasiness will start coming out from these spices and the water will dry up.

Step-2: Now leave the basmati rice soaked in water for 20 minutes. Then clean it thoroughly and drain the water. Now put cardamom, cinnamon, cloves, mace, nutmeg, black pepper, Shahjeera and star anise in a small cloth and tie a bundle. After this, boil about 750 ml water, add rice, bay leaves, salt and spices to it and cover the pan. After cooking about one-third of the rice, the remaining water will be removed from it. Apart from this, he will also remove the bundle. Now take lukewarm milk in a cup, put saffron in it. Now cover it and leave it for about 20 minutes. Also, mix rose water and kewra in it.

Now to make Biryani, take a heavy bottomed pan. In which two tablespoons of ghee will be added and heated. After melting the ghee, apply it well on the bottom and sides of the pan. Now turn off the flame. Then put layers of rice in it. Top with pieces of mutton. Then add some saffron water, fried onions and ghee. This action will be repeated till the material is formed. Now add mint and coriander, onions and green chillies along with juice of half a lemon on top of it. After this, put dough or foil paper on the sides of the pan. After this, cover the pan with a lid and leave it to cook for about 40 minutes. After this we will turn off the flame. Now for about 10 minutes the biryani will be kept like this. After this, Tasty Mutton Biryani can be served with salad and raita.
