Ingredients to make Shahi Pulao
Rice – 2 cups
Green peas – 1/2 cup
Paneer cubes – 1/2 cup
Cashew – 2 tbsp
Ginger paste – 1 tsp
Raisins – 2 tbsp
Cumin – 1 tsp
Cinnamon – 1 piece
Green chili – 3-4
Garlic – 3-4 cloves
Onion – 1
Cardamom – 4-5
Saffron – 2 pinches
Desi ghee – as required
Green coriander leaves – 3 tbsp
salt – as per taste

Shahi Pulao Recipe
To make shahi pulao, first take paneer and cut it into square pieces. After this, boil peas in water. Now finely chop green chillies and coriander leaves. After this, clean and wash the rice with water and cook them. Now keep the rice aside to cool down. Now put 1 tablespoon of desi ghee in a pan and heat it. After the ghee is heated, add cashews, raisins and fry them and take them out in a small bowl.

Now put some more ghee in the pan and add garlic, cumin, bay leaves, cardamom and fry it. After roasting for some time, add finely chopped onions, peas and ginger paste and fry them. When the onion turns light pink, add cheese and green chillies and cook it. When all the ingredients are cooked well, add cooked rice to it and mix it well with the spices with the help of a ladle.

Now cook the rice while stirring until the ghee gets absorbed well in the rice. After this add salt as per taste and let the rice cook. Now add some water and saffron in a bowl and mix. Now mix the saffron water in the casserole. After this, cook the casserole for 2 more minutes and then turn off the gas. Garnish the Shahi Pulao with cashews, raisins and green coriander leaves and serve it.
