Ingredients for making Bengali Rasgulla
Milk – 2 liters
Sugar – 3 cups
Flour – 2 tsp
Lemon juice – 2 tbsp
Saffron – 2 pinches
Green cardamom – 4-5
Pistachios – to garnish

How to make Bengali Rasgulla
If you want to start the new year with the sweetness of Bengali Rasgulla, then first of all pour milk in a big utensil and keep it on the gas to heat it. When the milk starts boiling, turn off the gas and let the milk cool down. After this take a bowl and add 2 tbsp milk and mix 2-3 tsp water in it. Now pour this solution little by little into the hot milk. After some time the milk will curdle.
When the milk curdles, separate the water from it and take out the chena from it. Now mash the Chhaina with both the hands and smooth it well and put it in a bowl. After this add refined flour to Chhaina and mix both properly and prepare Rasgulla balls from this mixture.

Now take a big vessel and put 7-8 cups of water in it and keep it on medium flame to heat. When the water starts heating up, add sugar to it and boil it. When the sugar syrup starts boiling, add crushed cardamom and two pinches of saffron to it and mix it with a spoon. When the sugar syrup starts boiling well, put Chhaina balls in it.
