Paaknam Recipe: Paknam, a local non-veg food dish of Manipur, is very much liked. Along with its special taste, the different method of preparation also makes this dish very special. Ingredients to make Paknam
Mushroom dried – 1/2 cup
Dried prawns – 100 grams
Maroi napakpi (hooker chives) – 1 cup
Onion chopped – 1/2 cup
Engri Fish Fermented (Steamed) – 7-8 pieces
Ginger – 1 tsp
Gram flour – 2 tsp
Turmeric (optional) – 1/2 tsp
Turmeric leaves – 4-5
Banana leaves – for wrapping
salt – as per taste

How to make Paknam
To begin making the Manipuri Pakanam recipe, first soak the dried mushrooms in water for 30 minutes. When the mushrooms become soft, wash them thoroughly with water 3 to 4 times so that their dirt is completely cleaned. After this put the mushrooms in the pressure cooker and cook till 3-4 whistles. After this, turn off the gaser and let the cooker cool down. After this, take out the mushrooms and squeeze out excess water and keep them aside.

Now take a bowl and add fermented steamed fish, green chillies, mushrooms, maroi napakpi and mash it well. After this add red chili powder, turmeric powder, gram flour, ginger and a little water to it and prepare the mixture. Now put the prepared mixture on the turmeric leaves and give it a square or round shape and wrap it well. Make a second layer over it and also wrap some banana leaves.

Now put it in a pan and roast it on low flame till it becomes golden brown. It may take 40 to 45 minutes to roast it well. After this, remove it from the pan and let it cool down, then open the layers of the leaves. After this cut it in your favorite shape. Tasty Paknam is ready.
