– To make Watermelon Panna, we need a big watermelon. Cut this watermelon into big pieces. There is no need to chop it too finely because we have to grind it later.
– We will grind this watermelon along with the seeds, so you do not need to remove the seeds. Put it in the mixer and grind it. The watermelon seed looks hard from outside, but it is very soft from inside. This will give a rich texture to your panna.
– Now put a pan on the gas and filter this mixture and put it in the pan. Now we have to cook this watermelon juice in the pan till it reduces to half. Keep stirring it in between. We have to cook it till it reduces to 50 percent.
– While boiling, we have to add half a bowl of sugar and Kashmiri red chilli as per taste in this panna. Kashmiri red chilli will give it a beautiful colour.
While it is boiling, roast black pepper and cumin seeds in another pan. After roasting, grind it with a rolling pin or something else.
– When the panna is half cooked, turn off the gas and add mint leaves along with the stem. Along with the stem because after some time we will remove these mint leaves by holding them by the stem, because the mint leaves turn black and they will turn the beautiful red color of your panna black.
– Along with the mint leaves, add black salt, white salt, roasted cumin seeds and black pepper. After dissolving them, leave it to cool.
– Now let this panna cool down and let the mint leaves remain in this pen.
– When this Panna cools down, remove the mint leaves along with the stems. Now finally add lemon juice to this Panna. Add a little more juice. Actually, while making this recipe, sugar, salt, lemon, chilli, everything has to be kept in large quantities because it will be prepared like a syrup.
