Jaipur: Jaipur is famous for its historic forts and palaces as well as delicious sweets. Among these, Ghevar sweets top the list, especially during festivals. There is a huge demand for Ghevar in the markets on Rakshabandhan. Ghevar is prepared in different shapes and flavors, which increases its sweetness even more. People are thronging to buy specially made Ghevar at shops more than 100 years old located within the walls of Jaipur. It is believed that the older the shop, the better the taste. Be it Teej, Gangaur, or Rakshabandhan, festivals in Jaipur are incomplete without Ghevar.
Satyanarayan Pitaliya, who has been running a Ghevar sweet shop for years, says that Ghevar is such a unique sweet that it is prepared in 5 different shapes, which includes large-sized Ghevar, mini Ghevar, Mawa Ghevar, Paneer Ghevar, dry fruits Ghevar and Rabri Ghevar. The smaller the size of this sweet, the tastier and more expensive it is. Satyanarayan Pitaliya says that the price of Ghevar sweet ranges from Rs. 300 to Rs. 1000. There is so much demand during weddings and festive season that Ghevar has to be prepared day and night.
How to make this special sweet
Generally, Ghevar is made by adding ghee to the mixture of milk and flour. After preparing the mixture properly, it is fried in ghee or oil in a hot pan and then it is taken out after dipping in sugar syrup and a layer of mawa, paneer, rabri is applied on it. There is also a very normal Ghevar which is made without sugar syrup. It is called Fika Ghevar. People buy it in large numbers and then add sugar syrup to it at home. Ghevar is prepared in both the forms of Desi Ghee and oil. The difference between oil and ghee is the only difference in its taste and price.
