Ingredients to make Kesar Burfi
Milk – 3/4 cup
milk powder 2 1/4 cups
Cashew powder – 1/4 cup
Desi ghee – 1/4 cup
Saffron – 1/4 tsp
Chopped dry fruits – 1 tbsp
Saffron food color – 1 pinch (optional)
Sugar – 1/2 cup

Kesar Barfi Recipe
To make Kesar Burfi, first heat the milk by pouring it in a utensil. When the milk becomes hot, add saffron threads to it, mix well and then keep it covered for 20 minutes. After the fixed time, transfer the milk to a big pan and add one-fourth cup of desi ghee to it and mix it. Now stir it with the help of a big spoon until the desi ghee melts completely.

When the desi ghee melts, add two and a half cups of milk powder, cashew powder, a pinch of saffron and half a cup of sugar to it. After this, mix everything with milk with a spoon and keep stirring. Mash it till all the lumps are gone. During this, keep the gas flame slow. Keep stirring the mixture continuously while cooking. The mixture will thicken in about 5 minutes.

This mixture has to be cooked on low flame for about 15 minutes. In this time the mixture will start leaving the pan. Keep in mind that after this, do not cook the mixture too much, otherwise the barfi will become hard. Now grease the bottom of a plate or tray and pour the prepared mixture in it and spread it in equal proportion. When the mixture is set, put dry fruits clippings on top and press it lightly.
After this, leave the mixture to set for half an hour. When the mixture is well set, cut it into square or diamond shape with the help of a knife. Tasty Kesar Barfi is ready. You can also store it in an airtight container and keep it in the fridge.
