Especially in big events, mainly Kair-Sangri is used in the dish of Panchkuta. Sangri and Kair are produced naturally. There is no need to do farming for this. There is sangri on Khejri and flowers come on the tree. Neither any kind of fertilizer or medicine is used in it nor does it require any hard work. Besides, it also has many medicinal uses. Its demand increases with the onset of summer. One specialty of Kair-Sangri is that this vegetable does not spoil for a year i.e. 12 months.

The interesting thing about Kair Sangri is that when Sangri is raw, its price at the local level ranges from Rs 150-170 per kg. Whereas carrion is available in the local market for Rs 200-220 per kg. But after drying of both the beans, the price of Kair-Sangri increases by about 5 times. Outside Rajasthan, in other states it is sold at the rate of Rs 1800-1900 per kg. With time, now that many things have started being sold online, Kair-Sangri is also available in the country and abroad. It is available for Rs 2500 to Rs 3000 per kg on various websites.

Medicinal benefits of eating Kair Sangri
Dr. Sarvepalli Radhakrishnan, Professor and former Dean of Rajasthan Ayurved University, Dr. Prem Prakash Vyas told that Car-Sangri contains Vitamin A, Calcium, Iron and carbohydrates. It is also an antioxidant, with flavor that boosts immunity. Powder is also made from the stalk of carrion, which is useful in cough and phlegm.
