Ingredients for making mustard greens
Mustard leaves – 4-5 cups
Chopped spinach – 4-5 cups
Onion chopped – 1/2 cup
Ginger chopped – 1 tbsp
Garlic chopped – 1 tbsp
Green chili chopped – 1 tbsp
Cumin – 1 tsp
Turmeric – 1/2 tsp
Red chili powder – 1 tsp
Asafoetida – 1 pinch
Oil – 1-2 tbsp
salt – as per taste

Mustard greens recipe
To make mustard greens, first take mustard leaves, wash them thoroughly and cut them into fine pieces. After this, wash the spinach, separate its stalks and chop them finely. Now put water in a deep bottom pan and heat it. When the water starts boiling, mix mustard leaves and spinach leaves in it and let them cook for 4-5 minutes. During this, keep stirring it in between.

After the fixed time, take a strainer and with the help of it remove all the extra water from mustard leaves and spinach leaves. Immediately after this, wash mustard, spinach twice with cold water and filter it well. After draining the water, keep them aside for some time. Now put half a cup of water and mustard, spinach leaves in the mixer and grind them to make a paste. Take out this paste in a utensil and keep it aside.

Now put oil in a pan and heat it on medium flame. When the oil becomes hot, add cumin and asafoetida to it and fry for a few seconds. Then add finely chopped garlic and ginger and fry. After frying for 30 seconds, add finely chopped onion and cook for a minute or two. When the onions start to change colour, add mustard-spinach paste to it, mix and cook for 2 minutes.
Now add turmeric, red chilli powder and salt as per taste to the greens and mix and let the mustard greens cook on low flame for 3-4 minutes. During this, keep stirring the greens in between. Mustard greens full of taste and nutrition are ready. Serve it with hot corn bread.
