Darshan Sharma/Sirohi: South India’s famous dish Dosa is being prepared in native style in Sirohi. Because of this its name is also unique. Generally dosa is prepared by baking it on a big pan, but here this dosa is prepared on a Sigdi (desi stove). Apart from plain dosa, masala dosa, many unique dosas including pineapple dosa are also made here on different sigdis. There is a huge crowd of youth here in the evening.

Shop operator Bhailal told that earlier this shop was at Jagdish intersection near the railway station, now it has been shifted to the mall located at the old check post. Here people understand less about Sigdi, hence it is also called Chulha Dosa. Here people have demand for many varieties of dosa.

This dosa is prepared in a very special way
After eating dosa cooked on gas, people suffer from gas problem, but dosa is cooked on coal on a stove. Its taste is also somewhat different from dosa made on the pan. When people saw the different way of making dosa on the stove, a crowd of customers started coming here. Gradually people started liking the taste. People are very fond of this dosa which is served with coconut chutney and sambar.

This is how dosa is made
After sprinkling a few drops of water on the non-stick pan, about half a spoon of oil is poured on the pan. The pre-prepared rice batter is spread in the middle of the pan and rotated in a circular motion. After turning and roasting for two minutes, it is taken out. To make Masala Dosa, its stuffing is added.
