Ingredients to make Sitaphal Basundi
Custard apple – 1-2
Milk – 1.5 liters
Chopped almonds – 2 tbsp
Pistachio slices – 2 tbsp
Cardamom powder – 1 tsp
Sugar – 5 tbsp (as per taste)
How to make Sitaphal Basundi
To make Sitaphal Basundi, first take out the seeds of Sitaphal and separate them. After this, put milk in a deep bottom vessel and keep it on medium flame to heat. Let the milk heat up and boil for about 10 minutes. During this, keep stirring the milk in between. Milk has to be cooked until its quantity remains one-fourth.
When the milk is reduced to one-fourth, add cardamom powder and sugar as per taste and mix it well with the help of a ladle. After this, let the milk cook on medium flame for 10-12 more minutes. After this, turn off the gas and put the milk in a deep bowl and keep it at room temperature for 1 hour to cool down. When the milk remains slightly warm at normal temperature, keep it in the fridge for about 2 hours.

After the fixed time, take out the condensed milk from the fridge and mix it well by adding pulp of cilantro, almond shavings and pistachio shavings. After this, once again keep the basundi in the fridge to cool down for half an hour. After the fixed time, serve Sitaphal Basundi by putting it in a serving bowl.
