Chole Katlambe is a Pakistani dish, but it is popular in Punjab as well, so this dish is half Punjabi and half Pakistani.
The owner of Mama Ji Katalambe Cart says that this is a kind of dish which people eat with great fervor. Katlambe is made from flour. After making it once, it can be kept at home for 10 to 15 days and eaten. Katlambe remains edible for so many days without spoiling. Many people in Dehradun are making Katalamba in refined oil but the Katalamba made in refined do not last long and they do not even have the original taste of Katalamba. Mama ji makes his katalambas in dalda ghee. This is a very old method of making Katalamba. At the same time, the chickpeas eaten with it are also prepared in a special way. Uncle gives two types of chickpeas to eat with his katalamba. Dry spiced and lightly moist chickpeas with lemon.

The owner of Mamaji Katlambe says that he has been planting this cart for 40-45 years in the vegetable market in Paltan Bazar, Dehradun, in the street with tomatoes. He told that earlier his brother-in-law used to do this work and before that his brother-in-law’s master Ram Ustad did this work. Ram Ustad, who came to Dehradun after the India-Pakistan partition, is credited with bringing the Katlambe dish to the capital Dehradun.
