But you might not know some special things related to this Rabri. In fact, there are only four rabdi shops in Bikaner and all of them belong to the same family. It is also special that if you eat Bikaner’s famous Rabri at any of these shops, you will get almost the same taste because they all had the same beginning.
These famous Rabdi shops are in Mohta Chowk of Bikaner. All this was started 90 years ago by Manka Maharaj by opening a shop. After that, with the expansion of this family, the number of shops increased and now in Bikaner all the shops where famous rabdi is available, in a way all belong to this family.
Radhe, the director of Manka Maharaj Rabri Wale, told that this shop is 90 years old. His grandfather Manka Maharaj had started this work and then due to purdah system, only men used to make rabdi. Now the practices have relaxed and the women of the family have also started helping men in this work.
Radhe told that it takes more than two hours to make Rabri. First the milk is heated well. After that the cream is separated. One and a half kg of Rabdi comes out in 8 kg of milk. Rabdi is ready after two hours. Sugar, saffron, pistachios, almonds and cashews are also added to Rabri.
Radhe told that 35 to 40 kg of Rabdi is sold daily at his shop. In the evening, the rabdi also ends. You can buy one kg of Rabdi here for Rs.350 per kg.
