Krishna Kumar / Nagaur. The name of Bhujia brings to mind Bikaner district of Rajasthan because Bikaner is famous for Bhujia. But the Bhujia made in Khinvsar tehsil of Nagaur, which is made only at one shop, is famous for its wonderful taste. Its special thing is that the taste of Bhujia made here is different from the Bhujia made in Bikaner. Along with Bhujia, Papdi is also made here.
In fact, the making of Bhujia and Papdi started in the year 1960. Which are being made for three generations today. The bhujia and papdi made here are of the same taste. Because here the method of making both may be different but the taste is the same. The same high quality ingredients are used to make Bhujia and Papdi. Due to which the taste of both these namkeens is similar. The same shop owner Sanjay told that whenever foreign tourists come to see the fort in Khinvsar, they taste the bhujia and papdi made here and many times order and take them with them.
Here is the recipe –Sanjay, the owner of a shop known as Madanji’s shop, told that this bhujia and papdi are made by hand. Gram flour, ajwain, chilli, cumin and garam masala etc. are used in making bhujia and papdi. After that it is fried in hot oil. Bhujia and Papdi are prepared in this way.
This is the price –Sanjay told that at present the price of both is Rs 250 per kg. This shop is located behind Main Bazar in Khinvsar. Where the statue of Eloji Maharaj is installed. This shop is located there.
