Special Pahari way of making Gaderi vegetable
To make Gaderi vegetable, first its peel is removed and then it is washed in hot water. Then water is heated in an iron pan by lighting a fire in the stove. Gaderi is cooked by adding salt to hot water. After this, seasoning of spices is added to it. Then the juice of non-intoxicating hemp seeds is added to it in the form of Pahari masala. By doing this, the flavor of this vegetable becomes hot and adding hemp juice enhances its taste. After this you can eat it with roti or rice.
Benefits of eating vegetables
During the winter season, Gaderi is grown in abundance in many hilly areas like Bageshwar and it is stored for the cold days. Local expert Ramesh Parvatiya says that this vegetable is eaten in the mountains for its hot taste. It is preferred with Manduva Roti. Apart from this, this vegetable can also be eaten with rice.
By consuming it, the body feels warm in cold weather and the body feels less cold. According to Ayurveda, eating this vegetable does not cause heart related diseases. Blood pressure remains under control. It is also beneficial for diabetic patients. It is rich in fiber, which strengthens the metabolism of the body. These days, Gaderi is being sold in Bageshwar market at the rate of Rs 60 to 80 per kg.
