If you want to make creamy and water-free curd, then use full cream milk for curd. It is best to use buffalo milk for curd. Boil the milk well before it curdles. After boiling the milk, let it cool down to room temperature. Keep stirring the milk in between so that the cream does not curdle. When the milk comes to room temperature, add a spoonful of curd to it and mix it well. After the curd is well mixed in the milk, cover the pan and keep it aside. Your curd will set by morning.

If you want to set curd quickly, then use an earthen pot. Apply curd on the inside of the pot in which you want to set curd. Now heat milk in another pot. When the milk is heated, add curd as per requirement and keep the prepared milk-curd mixture in an earthen pot. In the morning you will see that the curd has set like the market without any water.

Apart from this, you can set curd in a casserole. Casseroles are often used to keep roti warm. But, curd also sets quickly in a casserole. Boil half a liter of full cream milk and heat it. After this, pour it into the casserole and mix one spoon of curd. Now cover the casserole and keep it for three to four hours. After four hours your curd will set.
