This small bird named Swiftlet is found in areas of Asia like China, Taiwan, Hong Kong and Singapore. This soup is very popular in South-East Asia and the price of a small bowl of it is around Rs 3000. Due to its price, it is included in the most expensive dishes in the world. A special type of nest present in the swiftlet’s nest, called ‘red nest’, costs up to $10,000 per kilogram (about Rs 8 lakh). At the same time, the prices of white and black nests range from $5,000 to $6,000 (about Rs 4 lakh to Rs 5 lakh) per kilogram.

Recently, Chef Manoj Pandey of The Piano Man spoke to The Indian Express about this unique soup and said, “The Asian bird saliva soup, also known as Bird’s Nest Soup, has always been a subject of fascination for me. This dish is specially prepared and is quite expensive, which makes it a unique dish. Chef Pandey explained about its taste and texture, “Cleaning and soaking these nests is a lot of labor. It is then boiled in a delicious broth, which gives a delicate, gelatinous texture and a mild umami flavor. The chef said that this dish could be eaten only by the royal family centuries ago. Because this soup is a symbol of wealth and prestige in Chinese culture.
Boosts immunity, brightens skin
There are many beliefs among Chinese people about this soup. They believe that this soup has magical properties, which can cure cancer or it makes children grow taller. According to Chef Pandey, this soup is also considered very good for health. It is believed that drinking this soup creates new cells in the body, immunity also increases and the skin also glows. Some studies say that this soup can help in reducing fatigue.
