Sikar. The oldest beverage of Rajasthan is Rabri. In winter, Rabri made from millet flour provides relief from the harsh cold. Bajra Rabri keeps the body warm and works as a health enhancing tonic. In rural areas, it is considered a better tonic and winter drink, hence Rabri made from buttermilk and flour is very much liked in rural areas in winter. In villages, Rabri prepared at night is heated during winter and consumed with pleasure throughout the day.

Rabri made of millet and wheat is now being made in shops also. People drink it as a hot drink in winter. Kuldeep Prajapati, who sells Rabri by setting up a stall, said that the ingredients used in making Rabri have now become expensive, hence nowadays Rabri is being sold for ten to twenty rupees per glass at dairy booths and shops in urban areas.

This is how Rabri is made
Kuldeep Prajapati, who makes Rabri commercially, said that it requires millet flour, salt, buttermilk, onion etc. Bajra flour is better for making Rabri, but Rabri can also be made from barley and wheat flour. Kuldeep told that to make Rabri, a handi (small pot made of clay) is required. Mix millet flour in buttermilk in a pot and cook it on low flame. Some millet grains are put inside it while some people also add gram pulses. After cooking on flame for a long time, it is removed from the flame and in this way hot Rabri is prepared.

There is no problem of gas in the stomach
Ayurvedic doctor Narendra Kumar told that in winter, Rabri made from millet flour and buttermilk keeps the stomach warm and maintains strength. Due to this there is no problem of gas in the stomach. Truly, this is the elixir of winter. One must drink it to stay healthy and ward off cold.
