Faizan, the owner of an old shop of Sohan Halwa located in the Dargah area, says that he had heard about this sweet from his grandfather. It is said that when Emperor Akbar came to the Dargah of Khwaja Garib Nawaz, his cooks prepared halwa for him. But instead of becoming halwa, it became barfi made of wheat, ghee and dry fruits, which Akbar liked very much. Since then this sweet came into vogue. The most special thing about Sohan Halwa is that it does not spoil for a long time. This is the reason why people coming to Ajmer like to take it with them.

How is Sohan Halwa prepared?
Faizan explains that the method of making Sohan Halwa is a little different, because it is made only from Kathia wheat. First the germinated wheat is kept overnight in a solution of flour and sugar. Next day it is kneaded well with desi ghee in a pan. Then this solution is poured into small bowls along with dry fruits and allowed to dry. After this Sohan Halwa is ready.
