Sanjay Singh, agriculture coordinator of Rajpur block, told Local 18 that Buxar district is very fertile for farming. The main crops here include rice, wheat, maize, barley and oilseeds. A special type of rice is grown here, which is called Katarni rice, which is known for its special aroma. At the same time, he told that the name of Katarni rice is derived from the word ‘Katmi’. The word ‘Katmi’ literally means a needle, a pointed tool for piercing wood or leather. The name Katmi is due to the shape of the top of the paddy, which is similar to the tip of a needle.
It looks quite beautiful to look at
Katarni rice looks very beautiful. Small in size with needle-like ends and all the grains look the same. No grain looks different from the other. This kind of specialty is not seen in any other variety of rice. Soak Katarni raw rice for 2-3 hours before cooking. Cook it in the ratio of 1:4 (add 4 cups of water for 1 cup of rice). Whereas, soak Katarni raw polished rice for 10 minutes before cooking. Cook it in the ratio of 1:2.5 (add 2.5 cups of water for 1 cup of rice).
