Panchkoota is a combination of five vegetables
Panchkuta sabzi is a combination of five different vegetables, which include sangri, ker, kumtia, gunda and whole red chillies. This special type of vegetable is prepared by drying, due to which it can be preserved for a long time. If we talk about their price, Sangri is available for ₹ 1000 per kg, Kumtiya ₹ 400 per kg, Gunda ₹ 400 per kg, whole red chilli is available for ₹ 350.
This is how it is prepared
To make Panchkoota, all the dry vegetables are soaked in water overnight. In the morning it is boiled again in water and then taken out and dried. After this, asafoetida and cumin seeds are added to the oil and fried, after which Panchkoota is ready. It does not spoil for 7 to 10 days. In Rajasthan, Panchkuta is prepared on special occasions and wedding ceremonies. Confectioners also add cashew nuts, almonds etc. as per their choice. Foreign tourists also like this vegetable very much. Panchkuta is known as the royal vegetable. This is the only vegetable of Rajasthan which is more expensive than dry fruits.
That’s why Panchkuta is the most expensive
All the vegetables suitable for preparing Panchkoota grow in different seasons. It takes everything from collecting these five things to drying them. After time and drying, the weight of all these things reduces to half. These vegetables are found only in Marwar. The saying regarding Panchkuta is famous throughout Marwar, ‘Kair, Kumtiya, Sangri, Kachar, Bor, Matir, three people are not found, we long for God forever’. This means that Panchkoote, this dish is not found anywhere in the three worlds except Rajasthan. Even the gods crave for its taste. People consider it a blessing from God, because this desert plant grows on its own.
