Due to Ghevar being made only in the month of Saavan in Karauli, the people of Karauli are able to enjoy this sweet for only one month. Due to the month of Saavan, these days the markets of Karauli city have started smelling of this famous sweet called Ghevar. Due to Ghevar being made only for one month in Karauli, the taste of Ghevar here is also very special in itself. Not just one kind but many kinds of Ghevar are made at the sweet shops here.

This sweet starts in Karauli from Guru Purnima
Vinod Gupta, a famous sweets merchant of Karauli, tells that Ghevar is made in Karauli only in the month of Sawan. As soon as Sawan begins, Ghevar starts being made here from Guru Purnima. The Ghevar season in Karauli lasts only for 1 month from Guru Purnima. Gupta tells that especially three types of Ghevar are made in Karauli. One of which is plain Ghevar, one is mawa ghevar and one is cream ghevar.

According to the sweets traders, there is a huge demand for Ghevar in Karauli throughout the month of Saavan. But the maximum sale of Ghevar takes place on Saavani Teej and Rakshabandhan. This sweet called Ghevar is sold in Karauli for ₹300 to ₹400 per kg.

Ghee is prepared from refined flour after churning it
Sweets merchant Vinod Gupta tells that to make Ghevar, ghee is first churned. After churning it well, water is added to the ghee solution and its cream is made. Then flour is added to this solution and it is churned. And then later milk is added as per requirement and Ghevar is made by pouring this solution in the Ghevar mould in the pan.
