She says that raw Ghani mustard oil is most suitable for making pickles. It is known for its distinctive fragrance. Its oil gives natural aroma to the pickle. Therefore, use high quality mustard oil, so that the pickle can last for a long time.
Taste comes from spices
Neetu Devi prepares spices for pickles by grinding all types of spices. The special thing is that she uses rock salt in it which is organic. Neetu’s work has increased so much that she is also providing employment to 10 more women of her village in this work. Of these, 5 women are widows. Neetu prepares these organic pickles and sells them in shops and fairs. The price of pickle is ₹300 kg.
Why use rock salt?
Neetu Devi told that there is a common belief about rock salt that it is used only during fasting. This is a type of mineral, which can be considered as the pure form of salt. To make it edible it does not have to go through any kind of chemical process. Rock salt has many properties. This keeps the digestive system strong. It also helps in reducing the symptoms of many diseases like constipation, indigestion, gas and heartburn, hence we use rock salt in our pickles.
