To make it, the shopkeeper not only uses pure milk mawa, apart from this, special care is taken of the quality by keeping the quantity of sweets less. Chhagan Bajaj, owner of Maharaja Sweet Shop, said that his four generations have been running this sweet shop. Even today its craze remains the same as before.
Know the method of making
To make Kaju Katli, first of all cashews are soaked in water for 2 hours as per requirement. After which the cashews are thoroughly cleaned and washed and ground well. After this, a small amount of sugar is added to it and it is cooled. After squeezing, it is put in the machine along with the mawa and it is ground. After kneading, the prepared mixture is rolled out on a big flat. After this, it is kept to dry for some time, after drying, a layer of silver is applied on it and it is cut in triangular shape and given the shape of Kaju Katli.
Does not spoil for 15 days
He told that this Kaju Katli does not spoil for 15 days in winter and for 10 days in summer. Due to the special taste of this Kaju Katli, its demand is high in states like Uttar Pradesh and districts like Jaipur, Jodhpur, Bikaner. He told that during the wedding season, there are orders for 80 kg to 1 quintal of Kaju Katli every day. Due to which people have to book here in advance. At present the price of Kaju Katli is Rs 650 per kg.
