Ingredients to make Bharwa Karela
Bitter gourd (small sized) – 7-8
Onion finely chopped – 2
Cumin – 1/2 tsp
Fennel powder – 2 tsp
Coriander powder – 2 tsp
Turmeric – 1/2 tsp
Dry mango powder – 1 tsp
Asafoetida – 1 pinch
Oil – 3-4 tbsp
salt – as per taste
How to make Stuffed Bitter Gourd
To make Bharwa Karela, first choose soft bitter gourd. After this, put them in water and wash them thoroughly. Now peel the upper part of the bitter gourd with the help of a knife and after collecting all the shavings in a bowl add half a teaspoon of salt to it and mix it well and then cover it for 15 minutes and keep it aside. Now take the peeled bitter gourd and make a long incision in the middle of it, after that take out the seeds and pulp inside the bitter gourd and keep them in a bowl.
After making incisions in all the bitter gourds, apply salt on the inside and outside of each one and keep them for half an hour. After the fixed time, take the bitter gourd and wash them exactly two to three times so that the salt gets removed. Now put some oil in a pan and heat it on medium flame. When the oil becomes hot, add cumin and asafoetida to it and fry for a few seconds. After this, put finely chopped onions in the pan and sauté them while stirring till they turn golden.
When the onion is roasted properly, mix turmeric, coriander and fennel powder in it and fry while stirring. After this add bitter gourd peel, pulp, seeds, dried mango powder, red chili powder and salt as per taste in the pan, mix well and fry them all for 5-7 minutes. After this, turn off the gas and keep the roasted mixture to cool down.

When the mixture remains slightly warm, take one bitter gourd and fill it properly by pressing the prepared mixture in it. Similarly stuff all the bitter gourds. Now put 3 tbsp oil in the pan and heat it. After the oil is hot, slow down the flame and put the stuffed bitter gourd in them one by one. Now cover the pan and cook the bitter gourd for 5 minutes. After this, remove the lid, turn the bitter gourd and cook for another 5-7 minutes. During this, make the flame medium. After the stuffed bitter gourd is cooked well, turn off the gas. Stuffed bitter gourd curry is ready, serve it in lunch or dinner.
