One such taste is of Shriram Dabeli near Madhavganj Chowk on Roxy Road, Gwalior, which is a famous dish of Gujarat. The taste of this dish has reached such an extent that people wait for Shriram Dabeli’s shop to open and keep coming till late evening with family to taste Dabeli.
Shriram Dabeli’s director Mukund Laghate told that he started Dabeli’s shop in Gwalior about 20 years ago. At that time, he used to provide the taste of Dabeli to the people for just 4 rupees. As the inflation increased, the prices of Dabeli also started increasing. But the special thing is that the price of Dabeli has not increased so much that not everyone can taste it. Even today Dabeli is available to the people for Rs.15 only.
This is how pure Gujarati taste comes
Mukund Laghate told that the Dabeli which is made available to the people at his place has pure Gujarati taste. This is the reason that people come to his place in large numbers to eat dabeli. For this, fresh pav is bought, after adding tamarind date chutney, the paste prepared by mixing potatoes and hot spices is mixed. Then after applying specially prepared groundnut seeds and onion and potato paste, home made garlic chutney and sev namkeen are added to make it mildly spicy and it is fried in butter till it becomes crisp. Then the dabeli is ready for the customer. He told that he does not use any kind of sauce etc.
There are 8 employees in a small shop
The excellent taste of Shri Ram Dabeli can be gauged from the fact that he had a small shop. Because of which people used to stand outside, now they have increased the size of the shop. Apart from this, 2 different counters run in his shop so that the customer does not face any problem and the crowd is also controlled. At present, apart from him, 8 employees also work continuously in the shop so that no one is troubled and people do not have to wait for long.
