Many animal-based food items such as red meat, organic meat and some seafood contain high amounts of compounds called purines. Purines, when broken down in the body form a waste product called uric acid which is then filtered through the kidneys and eliminated from our body. Excessive consumption of purine-rich foods can increase uric acid levels, which can become difficult for the kidneys to process properly and thus lead to kidney stones and gout.
