Similarly, even today, Pav Bhaji and everything else is prepared on a coal-fired stove. Therefore its taste is completely different from normal pav bhaji. Mohan Singh tells that he learned to make Pav Bhaji from Nagpur and then after coming to Jaipur 45 years ago, he started making Pav Bhaji here. There was no provision of gas cylinder at that time. Therefore, pav bhaji was prepared on coal stove itself. People liked it a lot. Mohan Singh says that Pav Bhaji became most famous in Mumbai and people started liking it everywhere. That’s why he started making Jaipur sized pav bhaji from Udaipur.

Crowds of people start appearing in the evening
Mohan Singh says that we make pav bhaji only from 5 pm to 10 pm. A huge crowd of people gathers here during this time. He first prepares pav bhaji from home in raw form. After that, it is cooked on redi with its pure spices on the stove. Mohan Singh tells that along with Pav Bhaji, a special chutney is also prepared here. Which is in highest demand. The price of a plate of pav bhaji here is Rs 100. People visiting Chaura Rasta and shopping keep tasting Pav Bhaji as soon as they visit our place.
