Bathua Raita Recipe: As the winter season approaches, there are many types of greens and vegetables, which are very beneficial for your health. One of these is Bathua ka saag which has not just one but many benefits. You must have prepared Bathua Saag or eaten its Raita, but have you ever tasted Smokey Bathua Raita? There is a special pleasure in eating it with hot millet, maize or wheat rotis during cold days. You can also enjoy it this winter. Let us know the easy method of making Smoky Bathuay Raita.

Material
Bathua-100 grams
Curd- 200 grams
Whole cumin – 1 teaspoon
Cumin powder- 1 teaspoon
Red chilli powder – 1 teaspoon
Black and white salt- as per taste
Ghee- 2 spoons
Asafoetida- 1 pinch
Coal- 1 piece

Method of preparation
1. First of all, take out Bathua leaves and wash them thoroughly.

2. Now put the clean bathua in the cooker, add some salt and water and boil it.

3. Boil it for about 3-4 whistles and turn off the gas.

4. After the steam comes out of the cooker, open it and take it out in a steel strainer.

5. After it cools down a bit, put the bathua in a mixer and prepare its fine.

6. Now take curd in a vessel and beat it well.

7. After this add cumin, red chilli powder and salt and mix.

8. Now add ground Bathua to it and mix it well with a hand blender.

9. Now place a shallow pan on the gas and add two spoons of ghee in it.

10. When the ghee becomes hot, add cumin and a pinch of asafoetida and fry it a little.

11. Now add this mixture directly to the raita and mix it well.

12. Use coal to give smoky flavor to raita.

13. After burning well, put this coal in a small plate.

14. Now after placing this plate inside the raita, add ghee to the coal on top.

15. After this, when smoke comes out, cover it with the help of a big plate.

16. After some time, when you open this raita, it will have a smoky flavor.

17. Now your raita is ready, you can serve it with any roti.
