At a wedding, the bride and groom are excited and nervous because their new life is starting. But if the bride and groom leave them aside and talk about the wedding procession, then even in the biggest wedding, the entire focus of the wedding procession is on the grand feast. It is interesting that neither many spices are added to this vegetable nor many things are added to it. But the craze behind this simple vegetable is amazing. Although buttermilk or buttermilk potatoes are made in many parts of the country, this very famous vegetable is made in a different way in the areas of Western UP including Kanpur. While potatoes are often prepared with cumin seeds, this vegetable is sprinkled with fenugreek seeds.

Matha Ke Aloo Recipe

As you know from the name itself, there are two things in the name of this vegetable, buttermilk and potato. Both of them are also the heroes of this vegetable. Matha i.e. buttermilk is very good for the body and potato is a vegetable which is liked by everyone. Let us tell you its recipe.

Material
Boiled potatoes – half kg
1 packet buttermilk
one teaspoon fenugreek seeds
teaspoon turmeric
1 spoon chilli
salt as per taste
oil for sneezing

Method

  • First of all, boil the potatoes, cool them and peel them.
  • Now mash the boiled potatoes with your hands. Apart from this, take out the buttermilk in a vessel beforehand. You have to use only buttermilk kept at room temperature for vegetables.
  • Mash the potatoes with hands.
  • Put mustard oil in the pan on the gas and let it heat.
  • When smoke comes out, add fenugreek seeds in it. Add some asafoetida in it.
  • Now add turmeric and chilli in this oil and immediately add potatoes also. Coat the potatoes well with all the spices.
  • When the masala applies to the potatoes, add half a bowl of water. (Adding water will reduce the temperature of the pan and the vegetables will not burst when the butter is added.)

    Not many spices are added to Matha potatoes.
  • Now add buttermilk while stirring with a spoon and keep stirring the vegetable continuously. You have to stir this vegetable till the buttermilk starts boiling. Once it boils, leave the vegetable to boil on low flame for at least 10 to 15 minutes.
  • The flavor of green chilli tastes good in matha potatoes. You add green chillies on top.
    When the vegetables are cooked, add salt to it.
  • Garnish with green coriander and you can eat this delicious vegetable with rice, roti or puri. In Uttar Pradesh, this vegetable is eaten extensively with puri.
