Local 18 spoke to Sanjay, the operator of Hotel Second Wife located on Vaipura Road, Jhunjhunu. He told that to make chutney, firstly the garlic cloves are peeled. After that, chilli, turmeric, salt and green coriander are added to the ghee along with garlic and cooked for about 45 minutes. To make the chutney tasty, Kachari is grinded and added. This gives a different taste to the chutney. If curd or buttermilk is also added with it, its taste becomes double.

Effect of inflation
Sanjay told that the price of garlic has now increased from Rs 250 to Rs 300 per kg. In between the prices had gone up to Rs 350. Garlic being expensive has made a lot of difference. We are using it less and less now. Earlier, garlic was available for Rs 80 to Rs 100 per kg, but today the prices have increased two to three times.
