How to make makke ki roti perfectly: In winter, there is a craze among people to eat corn bread with butter along with mustard greens (sarson ka saag recipe). These days it has become everyone’s first choice and is in great demand at Punjabi dhabas. Actually, making this roti at home is not easy. If you try to make it at home, it tears or breaks while rolling or putting it on the pan, due to which the taste of the roti remains but it does not look perfect. While making corn bread, keep these things in mind-
Correct way to knead the dough-To knead corn flour, take lukewarm water and mix salt in it. If you want, you can also add Kasoori Methi in it. Now use 2 cups of water in 3 cups of flour. Do not make it too hard or too soft. A little wheat flour can be added for better results.
Let the dough rest-After kneading the dough, apply some ghee and keep the dough covered for 15-20 minutes. This will set the dough well and the rotis will not tear while rolling. Not only this, the rotis will also become soft.
Correct use of rolling pin- Use dry maize flour for rolling roti. You can also add wheat flour to it. First make the roti bigger by placing it on the palm and then roll it with light hands, do not apply too much force. If it is difficult to roll the roti with a rolling pin, then pat the dough ball with your hands and give it a round shape and correct the shape by placing it slowly on the rolling board.
Correct way of baking- When the pan gets heated well, place the corn roti on the pan on medium flame and cook it on one side. After lightly searing, turn to the other side. Apply some butter or ghee on the pan itself and turn it over and cook. In this way, roast all the rotis one by one.
