Ingredients to make Corn Soup
Sweet corn – 1 cup
Chopped green onions – 4 tbsp
Garlic cloves finely chopped – 2
Carrot finely chopped – 1/4 cup
Ginger finely chopped – 1 inch piece
Finely chopped beans – 1/4 cup
Corn flour – 1 tsp
Vinegar – 1 tsp
Black pepper powder – 1 tsp
Olive oil – 3 tsp
salt – as per taste

Corn Soup Recipe
To make tasty and healthy corn soup, first finely chop green onions, garlic, ginger, carrots and beans. Now put 3 spoons of olive oil in a pan and heat it on medium flame. After this, add garlic and ginger pieces to the oil and fry them. After a few seconds, add green onions to the pan and cook while stirring with a ladle. Now put half a cup of sweet corn, carrot and beans in it. Cook all the vegetables while stirring for at least 2 minutes.

Now put the remaining half cup of sweet corn in a blender and add 2 tablespoons of water to it and blend it to make a corn paste. Keep in mind that the paste has to be blended till smooth. After this, put the paste in the pan and cook it for 2 minutes. Then add 3 cups of water and salt as per taste and cook stirring well. Cover and boil the soup for 10 to 15 minutes.

Now put 1 teaspoon of corn flour in a cup and make a slurry by adding 1/4 cup of water to it. Add this solution to the corn soup and mix it well while stirring. Now boil the soup till it thickens. Keep in mind that there should be no lumps in the corn flour solution. After this, mix vinegar, 2 tbsp green onions and black pepper powder in the soup and after cooking for 1 minute, turn off the gas. Finally, garnish with green onions and serve corn soup.
