Ingredients to make Dabeli
Pav – 5-6
Potatoes boiled – 3-4
Onion – 1
Cumin – 1/2 tsp
Fennel seeds – 1/2 tsp
Sesame – 1 tsp
Cinnamon – 1/2 inch
Cloves – 5-6
star anise – 1
Bay leaf – 1
Black pepper – 1/2 tsp
Dry coconut – 2 tsp
Dry red chili – 2-3
Whole coriander – 1 tsp
Turmeric – 1/2 tsp
Sugar – 1 tsp
Dry mango – 1 tsp
Coconut grated – 1 tbsp
Tamarind Chutney – 5-6 tsp
Green chutney – 5-6 tsp
Spicy Peanuts – 2 tbsp
Pomegranate – 2 tbsp
Sev – 2 tbsp
Green coriander chopped – 2 tbsp
Oil – 2-3 tbsp
Butter – for toasting
salt – as per taste
Dabeli Recipe
To make Gujarati street food Dabeli, first of all, we will start the process of making the masala. For this, put coriander seeds, fennel, cumin, black pepper, cinnamon in a pan. After this add bay leaves, sesame seeds, dry coconut and dry red chillies. Now put cloves in it and fry all the spices on low flame. When the aroma starts coming from the spices, turn off the gas and let the spices cool down. Now put all the spices in the mixie and grind them after adding dry mango powder, sugar, turmeric and salt as per taste. After grinding the spices finely, take them out in a vessel. Masala for Dabeli is ready.

Now to make the potato mixture, first boil the potatoes and peel them and mash them in a big bowl. After this, put 2 tbsp oil in a pan and heat it. Meanwhile, put 3 tsp dabeli masala in a small bowl and add 2 tbsp tamarind chutney and 1/4 cup water on top. Mix it well so that no lumps remain. Now put this spice mixture in the hot oil.
After putting in the oil, let the spices cook for at least 2 minutes. After this add mashed potatoes and salt as per taste and mix it well. After roasting for 1 more minute, turn off the gas and take out the mixture in a bowl. After this, top the mixture with grated coconut, coriander leaves, pomegranate, sev and spiced peanuts.

Now take a nonstick pan/griddle and heat it on medium flame. Meanwhile, cut the pav from the center and spread 1 teaspoon green chutney on one side and 1 teaspoon tamarind chutney on the other side. After this fill the dabeli mixture in the pav and stuff 1 tsp finely chopped onion in it. After this, put butter on the griddle and roast the prepared dabeli in it. Roast it till it turns golden brown from both the sides. After that roll it in sev and serve hot.
