Ingredients:
2 bowl rice
2 cloves, 4-5 cardamoms, 1 bay leaf
Ghee 2 tablespoons
1 bowl sugar
dry-fruits
saffron/yellow food color

How to make Zarda

  • Soak 1 bowl of rice for 10 to 15 minutes.
  • First of all, heat water in a vessel. Add 2 cloves and one bay leaf in this water.
  • Now add washed rice to this boiling water and cook. Let the rice cook in this water and when about 10% of the rice is left to be cooked, take it out of the water and set it aside.
  • Now add one tablespoon ghee in a pan. Add crushed cardamom to this ghee. You can also use cardamom powder. Add rice immediately after cardamom. Stir the rice well so that all the ghee gets mixed in the rice.
  • Now add sugar in it. Deepika tells that many people also add sugar syrup in it instead of sugar. But I make it with sugar only. This makes them blossom.
  • When rice and sugar are mixed, Deepika finally adds yellow food color to it. However, many people also use saffron to give light yellow color to rice. This also gives a beautiful color and taste to the jarda.
  • After adding color, stir the rice well and then cover and cook for 10 to 15 minutes. During this time the sugar starts melting and now the rice gets cooked in this sugar.
  • Stir the rice once it is cooked. Finally add chopped dry fruits like almonds, cashews, chironji, pistachios etc.
