Vinod Prajapati has been running carts on Chakrata Road in Dehradun for the last 35 years. Vinod said while talking to Local 18 that he is originally from Uttar Pradesh. His father had come and settled in Dehradun about 50 years ago. He had learned this work from his father. Here he started serving the taste of Chole Chaat at the old bus stand of Dehradun, which was once near Inamullah Building. People liked the taste of Chole Chaat prepared with his secret spice. After this he started parking his cart on Chakrata Road. Since there was Prabhat Theater and Krishna Palace Theater here, a lot of people used to come to him to eat chaat.

Why use Malu leaves for Chole Chaat?
He said that people who came to watch the film could not stop themselves as soon as they smelled his chaat. If you too pass by this place on Chakrata Road, then seeing its fragrance and manner of humor, you too will be forced to eat their delicious Chole Chaat. If you taste it on Malu leaves, then believe me you will be forced to lick your fingers too. Vinod explains that Malu leaves have become very expensive and are no longer easily available because most people do not use it. At present they have to buy these leaves at the rate of Rs 120 per kg. He said that he wants to serve the same old taste to his customers, that is why he serves Chole Chaat on Malu leaves only. If a person wants to eat roti with chaat, then he serves chole with 4 rotis. The price of a plate of Chole Chaat is Rs 50.
