Ingredients for Chole-Kulcha

Flour – 250 grams
Curd – 3-4 tsp
Ajwain – 1 tsp
Potatoes boiled – 3-4
Sugar – 1/2 tsp
Cumin powder – 1 tsp
Green chili chopped – 1 tsp
Green coriander leaves chopped – 2 tbsp
Kalonji – 1/2 tsp
black salt – as per taste
Oil – for frying
Common salt – as required

for chickpeas
Chickpeas – 100 grams
Turmeric – 1/2 tsp
Red chili powder – 1/2 tsp
Coriander powder – 1 tsp
Chole masala – 2 tsp
Garlic – 4-5 cloves
Green chili chopped – 4-5
Ginger – 1/2 inch piece
Onion – 2
Tamarind water – 4 tsp
Cloves – 3-4
Black pepper – 1/4 tsp
Cinnamon – 1 piece
star anise – 1
Dry red chili – 1
Bay leaves – 2
Asafoetida – 2-3 pinches
Green coriander leaves – 2-3 tbsp
Oil – 2-3 tbsp
salt – as per taste

How to make Chole-Kulche
To make Chole-Kulche, first of all, we will start the process of making Chole. For this, keep the chickpeas soaked in water overnight. The next day, put chickpeas, one and a half to two cups of water and a little salt in a pressure cooker, cover it and cook for 5-6 whistles. Meanwhile, put turmeric, red chilli powder, coriander powder and chickpea masala in a bowl and make a slurry by adding a little water to it.

After this, grind garlic, onion, green chilies and ginger with the help of a mixer. Now put oil in the pan and heat it. When the oil becomes hot, add all the dry spices and fry them. After this, add onion-garlic paste and sauté while stirring for 5 minutes. When the onion turns light brown, add coriander-turmeric solution, asafoetida and salt as per taste.
Now add water little by little to the spices and fry well until the spices start leaving oil. After this, add boiled chickpeas to the pan and cook for 5-7 minutes. Then add tamarind water to it and let it cook for 2 more minutes. After this, turn off the gas and garnish the chickpeas with green coriander leaves. Tasty Chole is ready.

Now start the process of making Kulcha and knead a soft dough by adding all purpose flour, celery, curd, sugar and a little salt in a vessel. After this keep the dough aside for half an hour. This process can be done in free time even while the chickpeas are being prepared. Now mash the boiled potatoes and mix cumin, green chili, green coriander and black salt in it well.

Now take the flour and knead it once more. After this, make balls of flour. Take a ball and roll it a little and fill it with potato masala and make it again. Now roll it into a roti or a long shape and wet it by applying a little water on one side. Now place the wet side of the kulcha on the griddle. When the Kulcha sticks to the griddle, add some fennel seeds and green coriander and press it lightly.
After baking the kulchas for 2-3 minutes, turn the griddle upside down and put it on the gas flame. Bake the kulchas well on this flame. After roasting the kulcha well, take it out from the griddle and serve it hot with chickpeas after applying butter or ghee.
