Ingredients to make Guar (Gawar) pods
Guar (Gawar) pods 300 grams, Potato 1 (optional), Cumin 1/2 tsp, Ajwain 1/2 tsp, Asafoetida 1 pinch, Ground turmeric 1/2 tsp, Salt as per taste, Ground red chili 1/2 Take small spoon, ground coriander 1 spoon, dry mango powder 1/2 small spoon and oil as per your choice.

How to make Guar (Gawar) pods
First of all, remove the edge of the guar pod, if there is any thread in it, then remove that too. Now wash the gawar pods thoroughly. After this, wipe its water with a clean cloth. Then cut the pods into small pieces. If you are adding potatoes to it, then peel the potatoes and cut them into small pieces and then wash them thoroughly. Leave the potatoes on the sieve for a while, so that its excess water can drain out. Now heat oil in a pan on medium heat and add cumin and celery. Fry both of these with oil for a few seconds, then add asafoetida. After this, lighten the flame and add turmeric first, then gawar and later potato pieces. Mixing all the ingredients well, add salt, red chili and coriander powder. After this again stir the vegetable for 1 minute. Cover and cook the vegetable till the gawar and potatoes are cooked. After about 12 to 15 minutes, take off the vegetable.

Double will be served with puri-paratha
If you are fond of eating spicy food, then you can also add chopped green chillies to the curry of guar pods. Along with this, you can also add some garam masala as per taste in this vegetable. You can serve this vegetable with roti puri paratha or dal rice.
