To make paneer style gourd vegetable, one medium size gourd, three medium size tomatoes, two medium size onions, three to four garlic cloves, two bay leaves, two green cardamoms, seven to eight black peppercorns, salt as per taste, one spoon all purpose flour, Take two pinches of baking soda, four teaspoons curd, half teaspoon ginger-garlic paste, two teaspoons fresh cream, one teaspoon kasuri fenugreek, oil and water as required.

To make paneer style bottle gourd vegetable, first peel and wash the bottle gourd and cut it into small pieces. After this, put the pieces of bottle gourd in a mixie jar and also add three to four spoons of curd to it. Then grind both together to make a fine paste. Now take out the gourd paste in a vessel and mix two spoons of all purpose flour, salt and baking soda in it. After this, apply one or two drops of oil on a plate and grease the plate and spread this paste on a plate and keep it in the fridge for some time.

Now on the other hand, put onion, tomato, garlic, ginger, black pepper, bay leaf and green cardamom in a bowl, then put some water in the pan and put the bowl in it and boil it for some time after covering it. After this, after cooling all these things, grind them in a mixie and make gravy, but before that remove the peels of tomatoes. Now heat some oil in a pan and add cumin and ginger-garlic paste to it and pour the prepared gravy into the pan. Then add turmeric powder, coriander powder, red chili powder and salt to the gravy and fry it well. Now add kasoori methi and cream to the gravy and fry for two more minutes and cut the gourd paste you have stored in the plate into small pieces like paneer. Then put these pieces in the gravy and cook it for two to three minutes. After this add two pinches of garam masala in the end. Your paneer style gourd’s tasty vegetable is ready.
