What is Dum Pukht Method?
Have you ever heard or seen about Dum Pukht or Dum cooking method? You must have seen it, but you may not know its name. Actually, Dum cooking method (Dum pukht) is a way of cooking any dish, in which a lid is placed on the vessel and sealed around it with flour, so that the steam inside does not come out from anywhere. In dum cooking, food is cooked slowly. Dum Pukht is mainly associated with the cuisine made in the Mughal Empire. Its roots are linked to Persian or Central Asian cuisine.
Dum means ‘to keep the food on low flame’ and Pukht means ‘the process of cooking’. In this way it means ‘cooking food on slow fire’.
In this technique, the food remains cooked in steam inside a sealed vessel and the aroma, taste and aroma remain intact. Mainly Biryani, many non-veg recipes like mutton, chicken and any curry based vegetable are also made with this technique.
What is Dum cooking method (Dum cooking pot is sealed with dough)
– When you use dum cooking method to make biryani or any non-veg item, then after putting the lid on it, the kneaded dough is sealed well on it.
– Any dish is cooked in steam on low flame in this cooking method. Due to this, the taste of all the ingredients in the dish slowly dissolves in the dish.
– The most important thing is that many dishes are prepared in this method for hours. Depending on the quantity of the dish, it takes several hours to prepare.
-An earthen pot or a big handi is best for cooking in Dum cooking method. Since food is cooked for a long time in this technique, it is better if the bottom of the vessel is a little thick so that the food does not burn.
The science behind this cooking method
When you cook any food on low flame and slow speed, all the ingredients like whole spices, powdered spices, other ingredients like vegetables, rice, mutton, chicken etc. get a perfect taste blend. When the recipe is steamed in a vessel sealed with flour, it tastes amazing. Due to steam cooking, the dish becomes very soft, as if it melts in the mouth. The taste of each spice is revealed while eating.
