Ingredients for making Sweet Mango Pickle
Raw Mango (Kairi) – 1 kg
Jaggery/sugar – 1/2 kg (as per taste)
Roasted fenugreek seeds – 1 tsp
Kalonji – 1/4 tsp (optional)
Roasted fennel ground – 1 tsp
Turmeric – 2 tsp
Red chili powder – 1 tsp
salt – as per taste

Sweet Mango Pickle Recipe
To make sweet mango pickle, first take hard raw mangoes and peel them with the help of a sieve and cut them into small pieces. Now wash them and spread them in the sun for 1-2 hours and dry them. Now put a pan on the gas to heat it and put raw mango pieces in it. Mix sugar in it little by little and keep stirring with a spoon. After adding all the sugar, add roasted fennel, fenugreek seeds, turmeric and red chili powder.
After this, mix fennel seeds and salt as per taste in the pan. Sugar will start releasing water during cooking, during this let the pickle cook on low flame. When the frozen raw mango buds melt and the pickle starts to look thick, then turn off the gas. Tasty and sweet mango pickle is ready. Now let it cool down and then put it in a sugar jar or an airtight glass jar and store it. It can be served with lunch, dinner or breakfast, snacks recipe.
