Mustard Greens – Ingredients for Makki Ki Roti

Ingredients for Sarson Saag
Mustard greens – half a kilo
Spinach – 100 grams
Bathua – 100 grams
Tomato – 3-4
Green chili – 2-3
Ginger paste – 1/2 tsp
Green coriander – 2 tbsp
Mustard oil – 3 tbsp
Maize flour – 3 tbsp
Asafoetida – 1 pinch
Turmeric – 1/4 tsp
Red chili powder – 1/4 tsp
Coriander powder – 1 tsp
salt – as per taste

Ingredients for Corn Bread
Corn floor – 2 bowls
salt – a pinch
Desi ghee – as needed

Mustard Greens – Method for making Makki Ki Roti
First of all, we will start the process of making mustard greens. For this, clean the mustard greens and break its leaves. After this wash them with water, remove excess water and then cut them. Similarly, clean the pal and badhua and chop them finely. Now cut tomatoes, green chillies, ginger and grind them in a mixer jar and prepare their paste. Take out the prepared paste in a bowl.
Now put chopped mustard, spinach and bathua in the cooker and add half a cup of water on top. Cover the cooker and cook till 1 whistle. After this, after the pressure of the cooker is over, take out the vegetables in a vessel. Now put mustard oil in the pan and heat it. When the oil becomes hot, add cumin, asafoetida, turmeric and coriander powder and fry it. Now add maize flour and fry it lightly, then add tomato-green chilli paste and mix and cook.

Now cook the gravy till it leaves oil. After this, mash the boiled greens of mustard, spinach, bathua by pressing them. When the spices are cooked, add mashed vegetables to it. Add one cup of water and green coriander and cook the vegetable for 10-12 minutes. During this, keep stirring in between. Turn off the gas after the vegetable is cooked. Mustard greens filled with taste are ready.

Now let’s start the process of making maize bread. For this, first put corn flour in a utensil and put a pinch of salt in it. Now add water little by little and knead a hard dough. Then soften it by mashing it well and make dough. Now keep a pan for heating. Take a ball of dough and give it the shape of a roti by rolling it with your hands and then put it on the griddle. Bake the roti till it turns golden brown from both the sides. Similarly make all the rotis. Apply butter on hot roti and serve with mustard.
