Aditya Anand/Godda.The famous Rabdi shop of Dumariya located on Bhagalpur Road, Godda is quite famous. People from Bihar including Jharkhand also come here especially to eat Rabri. Along with Rabdi, the peda and tea of this shop are also excellent. The shop owner says that he sells 2.5 quintals of rabri made from milk every day. People from Godda district and Bhagalpur of Bihar also come to eat the rabri of this shop.
The owner of the same shop, Vivek Sah, said that the demand for Rabdi in his shop is huge but he is not able to prepare that much material. Therefore, he is able to make rabri from only two and a half quintals of milk every day so that the quality of his rabri remains intact. Along with this, Vivek told that when he started this shop during the lockdown 5 years ago, he used to mix only Kissam in Rabri. At that time its price was Rs 30 per cup. Today they add pistachios, almonds and cashews along with raisins to Rabdi, yet its price is only Rs 30 a cup.
How to make Rabdi?
Vivek told that earlier he used to make rabri by himself. But gradually, when the demand for Rabdi started increasing, he hired artisans to make Rabdi in large quantities. Here he starts heating the milk in a big vessel at four in the morning. He heats 50 kg of milk at a time. The milk is heated on fire for 2 to 3 hours and thickened. Only a nominal amount of sugar is added to it. Rabri is prepared every day from 10 to 11 o’clock. After this, it is put in an earthen cup and cashew nuts, raisins and pistachios are added to it. Then keep it in the refrigerator. Rabdi tastes more delicious after it cools down.
