Ingredients to make Carrot Kanji
Carrot – 250 grams
Yellow mustard powder – 3 tsp
Turmeric powder – 1/2 tsp
Asafoetida – 2 pinches
Mustard oil – 1 tbsp
Salt – as required
water – 2 liters

How to make Carrot Kanji
To make delicious and nutritious carrot kanji, first peel the carrots. After this, wash the carrot with clean water and then after drying the water, cut it into one-inch pieces. Now pour about half a liter of water in a vessel and keep it on medium flame to heat. When the water starts boiling, put carrot pieces in it. After boiling the carrots for a while, turn off the gas and cover the vessel and keep it for 10 minutes.

After 10 minutes, take out the carrots from the water and put them in a big bowl. Add red chilli powder, yellow mustard powder, turmeric powder, salt as per taste and oil to it and mix them all well. Now put the remaining water in another vessel and heat it on medium flame. When the water comes to a boil, turn off the gas and leave the water to cool.

When the water cools down, put it in a glass container. After this, add spice mixed carrot in it. Now put asafoetida powder in the container and cover the glass container and keep it in the sun for 3-4 days. In this time, apart from being tasty in water, it will become sour. This means that carrot kanji is ready. You can drink it whenever you want. By keeping it in the fridge, the kanji will last for 15 days and the sourness will not increase much in it.
