The chicken is first marinated, then fried and mixed in a paste of ground spices. If you are a chicken lover, then you need to try this unique chicken recipe. You will need a lot of spices to make this succulent chicken recipe. The specialty of this recipe is that it is prepared with lots of red chillies and ground spices. Lots of spices are added to it. This chicken is prepared with lots of spices. Ghee Roast Chicken is not exactly curry chicken but a dry chicken. If you want to make it as a curry, you can first roast the chicken as per the recipe given below and then add it to the curry of your choice.

1 kg chicken chopped
1/2 tsp turmeric
1 tbsp lemon juice
6 tbsp ghee
2 tbsp red chili powder
1/2 tsp cumin
1/4 tsp fenugreek leaves (methi)
1 1/2 tbsp tamarind paste
Salt as required
1/2 cup curd (yogurt)
Handful curry leaves
2 tbsp jaggery
8 roasted dry red chillies
6 black peppercorns
1 1/4 tbsp coriander seeds
Handful garlic flakes
3 cloves

How to make chicken

In a bowl add chicken, 1 tbsp red chili powder, curd, turmeric powder, salt and lemon juice. Coat the chicken pieces well with this mixture. Keep it aside for at least 30-45 minutes. Heat ghee in a pan and add fenugreek seeds, whole coriander, cloves, cumin and black pepper. Fry them on low flame for 3-4 minutes. Now make a paste by grinding tamarind paste, red chili powder and garlic flakes with roasted red chilies and spices.

Put 2 and 1/2 table-spoon ghee in a pan. Add the marinated chicken pieces and the remaining marinade to the pan. Cook the chicken till they are 3/4 cooked. Now keep the chicken pieces aside and pour the remaining ghee in the same pan. Fry the ground paste for 7-8 minutes on low flame. One thing to be observed while roasting is that ghee should ooze out from the masala.

Now put chicken pieces and jaggery in the pan. Add 2 tbsp water along with salt as per taste. Note one thing that you should not add much water as this is a roasted chicken recipe. Cover the lid and cook on low flame for 10 minutes. Once done, remove the lid and cook for 2 more minutes. Check whether the chicken is fully cooked or not. Once done, turn off the flame. Garnish the chicken with curry leaves. Your Ghee Roast Chicken is ready to be served.
