Bhindi – 300 grams
Tomato – 1 to 1/2
Onion – 1 big size onion
Red chili powder – 1/2 tsp
Cumin – 1 tsp
Coriander powder – 1 tsp
Ginger-garlic paste – 1 tsp
Dry mango – 1/4 tsp
Kasuri Methi – 1/2 tsp
Chaat masala – 1/4 tsp
Garam masala – 1/4 tsp
oil – as needed
salt – as per taste

First of all wash the bhindi and wipe it with a clean cloth and then divide it into two pieces. Now rip the bhindi lengthwise from the middle. Now put 2 tbsp oil in the pan and then let it heat on low flame. After the oil is hot, put bhindi in it. Fry the bhindi in low flame. Fry the bhindi for a while so that its stickiness goes away.

Now take out the bhindi. Now put oil in the pan and add asafoetida, cumin, ginger garlic paste and fry it. After some time, when the color of the onion starts to turn brown, put chopped tomatoes in it. Mix the tomatoes well in the whole vegetable.

After mixing tomatoes and onions well, add spices to it. First add turmeric, then red chili powder, then add garam masala. After this add green chili and salt as per your taste. Stir it in such a way that the gravy of bhindi and spices mix well.
