Ingredients to make Kesar Phirni
Rice – 1/2 cup
Milk – 1 liter
Pistachio slices – 1 tbsp
Cashew pieces – 1 tbsp
Green cardamom powder – 1/2 tsp
Saffron – 20-25 threads
Sugar – 1/2 cup (as per taste)

How to make Kesar Phirni
To make Kesar Phirni, first clean the rice and then wash and soak them in water for half an hour. After the fixed time, remove the extra water from the rice and transfer the rice to a mixer and grind it coarsely. Now pour milk in a thick bottom pan and keep it on medium flame to heat. When the milk starts boiling, put coarsely ground rice in it and cook while stirring.

Slow down the flame while cooking the rice and keep stirring the rice during this too. The milk has to be cooked until the phirni becomes thick in appearance. Continuous stirring of the phirni will not stick to the bottom of the pan. After this, mix cashew pieces and sugar according to taste in the phirni and boil for 5 minutes. Meanwhile, take a little hot milk in a bowl and mix saffron threads in it.

Now pour the prepared saffron milk into the phirni and mix it well with the help of a big spoon. Allow the phirni to cook for another 2-3 minutes. After this turn off the gas. Lastly add crushed cardamom seeds to the saffron phirni and mix it well. Tasty Kesar Phirni is ready. Serve it hot.
