Recipe:Pickle lovers are a different story altogether. Be it mango or lemon. The Indian home plate is incomplete without pickle and papad. In every home, pickle of some fruit or vegetable is made according to the season. Like mango pickle is made in summers, while mixed vegetable and chilli pickle is made in winters. You must have eaten many types of pickles, but have you ever tried cashew-almond pickle? If not, then make this pickle at home using this recipe once, you will definitely like its taste.

Ingredients
1 cup cashews
1 cup almonds
1 tsp black salt
1 tsp fennel seeds
1 tsp Kashmiri red chilli powder
1 teaspoon hot red chili powder
1/2 teaspoon turmeric powder
1 tsp cumin seeds
1 teaspoon salt
2 tsp dried mango powder
250 grams sugar
4 cardamoms
Juice of 1 lemon or 1 teaspoon vinegar

Method
step 1

First of all, heat a pan on the gas. After the pan is heated, add sugar with 1 cup water and cook it. Now add cardamom powder to the sugar solution. Cook the sugar till it boils. Keep in mind, the sugar should not stick. For this, keep stirring it again and again in between.

Step-2
Now as soon as the first boil comes, when a white foam starts coming out on top, then add cashews and almonds to it. Now cook both of them till it boils. You have to keep in mind that this mixture of nuts and sugar should have the texture of a single-strand syrup. For this, dip a spoon in it once and lift it straight up and see. If the syrup is falling straight, then it is fine. You can also check it in water. For that you have to take water in a bowl. Now pour the syrup in the water like a stream. If the syrup dissolves in the water, then understand that it is not ready. If it separates from the water, then it means that the syrup is made correctly.

Step-3
In the next step, you have to add all the spices like dry mango powder, black salt, fennel etc. and mix them. After adding the spices, you have to cook it while stirring it for 5 minutes. At this time the flame of the gas should be low. Our cashews and almonds are cooked. Now you just have to cook the spices a little. When it takes a slightly thick texture, turn off the gas. Now leave the pickle to cool in the air for about 5 minutes.

Step-4
When the pickle cools down, add vinegar or lemon juice to it and mix well. Your sweet and sour cashew-almond pickle full of goodness is ready.

You can eat it with food. This pickle tastes very delicious with parathas too.
