According to the news published in Indian Express, a person named Krish Ashok shared a video on his Instagram in which he told many things about left over food. Which hardly people would know. He said that have you ever wondered why yesterday’s fish curry, biryani and vatha kuzhambu taste more delicious after staying in the fridge overnight? But puri and chapati do not taste that good?

Sushma ji, clinical dietician at Care Hospitals, Banjar Hills, Hyderabad, said, different types of chemical reactions take place in many foods. Due to this, their taste changes.

Sushma tells that there are 7 types of chemical reactions in food. 

Maillard reaction: Amino acids and sugars react together to enhance flavor.

Enzymatic activity: Enzymes in foods such as fats or proteins continue to break down after cooking.

Starch retrogradation: During this process, starch starts forming in the food. 

Oxidation – When exposed to air, new flavors can develop in food.

Microbial fermentation – organisms present inside the food cause fermentation 

Flavor compound diffusion – when different ingredients mix together over a long period of time.

Moisture starts developing in the food – When moisture starts developing in the food. 

Does heating and cooling of food cause changes in its taste?

It is often said that heating food enhances its taste. Cooling and then reheating food definitely enhances its taste. Because many types of chemical reactions take place in it. Sushma says that if the moisture of a food is gone, then it can be kept for a long time. When starch-rich food hardens, the fat present in it disappears. Food becomes soft or hard due to chemical reactions taking place in the food.
